Lime Juice: Types, Uses and a Practical Buying Guide
Published by Sansha Naturals · Updated 29 September 2026.
Lime juice can mean freshly extracted juice, single-strength or not-from-concentrate juice, concentrate, clarified juice or a formulated cordial. This guide explains those differences and the details commercial buyers should confirm before approving a product.
What is lime juice?
Lime juice is the liquid obtained from lime fruit, but the product name alone is not a commercial specification. The juice may be filtered or cloudy, supplied at single strength or concentrated, and processed or packed differently for different applications.
A useful quote or purchase order identifies the product form, composition, target measurements, packaging and storage requirements. Terms such as natural, fresh, pure and clear should be supported by an agreed definition and current product documentation.
Lime juice terminology explained
- Freshly extracted lime juice
- An everyday description for juice recently expressed from lime fruit. It does not, by itself, define filtration, heat treatment, ingredients, shelf life or commercial pack conditions.
- Single-strength or NFC lime juice
- Juice supplied at its usable strength rather than as a concentrate intended for dilution. NFC means “not from concentrate”; buyers should still confirm the processing history and specification for the offered product.
- Lime juice concentrate
- A higher-solids ingredient produced by removing part of the water from juice. Its concentration, reconstitution basis and measured parameters must be stated in the commercial specification.
- Clarified or clear lime juice
- Juice processed to reduce pulp and suspended material. “Clear” describes appearance or processing intent; it does not automatically mean concentrated, preservative-free, sterile or ready to drink.
- Lime cordial
- A formulated beverage or beverage base that may contain water, sugar or sweeteners and other permitted ingredients. A cordial is not the same purchasing category as plain lime juice.
What does clear lime juice mean?
Clarification reduces suspended pulp and particles to create a clearer appearance. It does not establish concentration, ingredient or preservative status, sterility, shelf life or microbiological status.

Parameters to confirm before buying lime juice
| Parameter | What to define |
|---|---|
| Product form | Single strength, concentrate, clarified/clear, cloudy or another defined form. |
| Composition | Juice content and any added ingredients, processing aids or preservatives that must be declared or excluded. |
| Soluble solids | The required °Brix range and the measurement temperature or method used for acceptance. |
| Acidity and pH | Target acidity expression, pH range and agreed test methods; these measurements are related but not interchangeable. |
| Appearance | Expectations for colour, clarity, pulp, sediment and separation, including how the sample will be assessed. |
| Sensory profile | The agreed approach to aroma and flavour evaluation using a representative sample. |
| Microbiological criteria | Limits appropriate to the intended application, processing step, destination market and buyer quality plan. |
| Pack and logistics | Net quantity, packaging format, palletisation, dispatch destination and required transport conditions. |
| Documentation | Current specification, lot identification, certificate of analysis and other documents required for the intended market. |
Understanding Brix, acidity and pH
Degrees Brix indicates soluble solids under the stated test method and temperature. Titratable acidity estimates the acid neutralised under the stated conditions, while pH describes hydrogen-ion activity. These measurements are related but not interchangeable, and a result should be tied to an identified sample, method and date.
Common commercial uses of lime juice
Beverage manufacturing
Lime juice may be evaluated as an acidic citrus ingredient for beverages, bases and syrups. The required form depends on the formulation and production process.
Food processing
Commercial teams may assess it for sauces, dressings, marinades, condiments and other prepared foods where acidity and citrus character are part of the product brief.
Food service and catering
Pack size, ease of handling, opened-pack controls and consistency between deliveries are important when lime juice is used in repeated service operations.
Ingredient distribution
Distributors normally need clear product identity, traceable lots, storage instructions and documentation that can be matched to each supplied batch.
Packaging, transport and storage
Confirm food-grade packaging, net quantity, closure, lot marking and transport conditions before ordering. Product-specific documentation should state unopened shelf life, storage temperature and opened-pack instructions; buyers should not infer these details from a generic name or photograph.
What to include in a bulk lime juice enquiry
- The lime juice form and intended commercial application
- Required quantity, pack preference and delivery destination
- Target °Brix, acidity, pH, clarity or other acceptance parameters
- Ingredient or preservative requirements and any exclusions
- Required sample, specification, batch or regulatory documents
- Delivery schedule, transport conditions and repeat-supply needs
Frequently asked questions about lime juice
Is lime juice the same as lemon juice?
No. Lime and lemon juices come from different citrus materials and should not be treated as interchangeable product identities. A commercial requirement should name the required fruit and define the relevant specification.
Is clear lime juice the same as lime juice concentrate?
Not necessarily. Clear or clarified describes reduced suspended material, while concentrate describes juice from which part of the water has been removed. A product can be clarified without being a concentrate, so confirm both form and concentration.
What does NFC lime juice mean?
NFC means not from concentrate. It indicates that the juice was not concentrated and then reconstituted, but it does not answer every purchasing question. Processing, ingredients, pack format, storage and batch results still need confirmation.
Which measurements matter when purchasing lime juice?
Common evaluation points include soluble solids (°Brix), titratable acidity, pH, appearance, sensory profile and applicable microbiological criteria. The relevant limits and test methods depend on the product, application and buyer specification.
Does a single laboratory report define every future batch?
No. A report describes the identified sample or batch that was tested. Buyers should request the current offered-batch information and compare it with their own approved specification before purchase.
How long does bulk lime juice last?
There is no responsible universal answer. Shelf life depends on the product form, processing, packaging, storage, handling and validation performed for that product. Use the supplier’s current label and documentation rather than assuming a duration.
How should lime juice be handled after opening?
Follow the product-specific instructions. Opening changes the protection provided by the original sealed pack, so hygienic dispensing, controlled exposure, suitable temperature and an approved opened-pack use period may be required.
Can I request a sample or current documents before a bulk order?
Include your quantity, destination, target specification and document list in the enquiry. Sample and document availability can then be confirmed for the material and batch being offered.
